Ingredients:
Ribs (Country or St. Louis cut)
Honey
Kosher salt
Ground pepper
Mesquite seasoning
Pineapple juice
Jack Daniel's Honey Smokehouse BBQ Sauce*
If possible, begin marinading the night before for full flavor impact
Generously rub both sides of your ribs with salt, pepper and mesquite seasoning
Write your name over the top of the ribs with honey
Packet ribs in at least 2 layers of non-stick aluminum foil
Add one small (bar-sized) can of pineapple juice
Place in fridge and allow to marinate at least an hour
Start one burner of your gas grill and heat on low. Maintain a grill temperature of 250 to 300 degrees.
Place rib packet on indirect heat of the grill
Go about your day!These ribs will take 3 to 4 hours total, and will require checking hourly.
After the second hour, carefully open aluminum packet and top ribs with BBQ sauce.
When country ribs have reached 160 degrees, or St. Louis cut have pulled away from the bone ends, remove from packet and place on direct heat.Grill to your preferred level of crispiness, brush with additional sauce, and serve immediately.
