Ingredients:
1 pizza dough1/2 cup fresh tomato sauce
| partially thawed chicken on mandoline |
1 cup Pecorino Romano cheese (hand grated)
1 cup Extra sharp cheddar cheese (hand grated)
1 ripe avocado, thinly sliced
1 thinly sliced boneless chicken breast, seasoned with salt and pepper
1 cup cherry or grape tomatoes, halved
Stretch pizza dough to fit 24" baking stone
Drizzle lightly with olive oil and spread fully over the dough with your fingertips
With a fine cheese grater, cover the olive oil with a layer of Pecorino Romano, then thinly spread the freshly made tomato sauce with the back of a spoon
Top with the halved grape tomatoes.
Mix the hand grated cheeses and cover the pizza base
Top with the seasoned chicken slices
Bake at 350 degrees for approximately 20 to 30 minutes
When crust is crisp and lightly browned, top the pizza with the avocado slices and bake another 5 to 10 minutes
Allow to rest 5 minutes before serving
Ooooh avocado on pizza. Looks great.
