Ingredients:
Fresh garden tomatoes
2 cloves garlic
1 handful finely chopped oregano (or 1 tablespoon dried)
1 teaspoon paprika
Kosher salt to taste
Core and rough chop tomatoes and place in food processor
Add 2 cloves peeled garlic, oregano and paprika
Purée
Transfer to saucepan and simmer, stirring occasionally until reduced by a third
Salt to taste
A simple, light in texture, bold in flavor, ready-in-under-15minutes sauce, it is easily frozen in an air tight container.
